Fat is an essential part of our diet but being fat is not! This is a nation in paradox: over 65% of the country is overweight, 33% is obese and we have an unprecedented growth in obesity in children yet we are a fat phobic nation. How can this happen?
Fat Phobia - the fear of fat because fats kill - is all pervasive in our society but it is really our ignorance about fat that is the real killer! Many people feel that the fat free diet is the right answer to all of our overweight problems and that we will live healthier but nothing is further from the truth!
Eating the right kind of fat is essential to a healthy life and the overall percentage of fat in our diet should be between 30% to 40% (40% carbohydrates and 20% protein). The reason for this becomes really clear when you know what fat does in our body:
Critical for brain development in growing children
Supports the immune function
Important in the production of hormones
Required in energy production
Stabilizes every single cell in the body, particularly cell membranes

The essential fats, for living healthy include linolenic and linoleic acids - and you can find these names on food labels. In the right ratio of omega 3 to omega 6 - our bodies will find the best balance it needs.
License to kill:
The killer fats are the fats that have been processed to improve their shelf life, the taste, color and customer appeal. These are often trans fats and hydrogenated fats, and commonly found in breads, cakes, candies, cookies, crackers, pancake mixes, instant soups, chocolate, desserts, chips, convenience and junk foods, peanut butter to name a few!
Any type of fat that is subjected to excessive heat, like deep frying, and especially the healthy fats, will create fatty acids that actually become very toxic to the body and therefore must be completely avoided.
Excessive hard fat - the saturated fat that is found in pork, beef and lamb as well as dairy products, leads to more fat than the body can handle.
The killer fats will contribute to heart attacks, strokes, impaired circulation, cancer, impaired insulin function, impaired cell membranes and overall fat metabolism, joint problems and birth defects.

Truth is - with all the scientific evidence surrounding fat - as a culture, we still got it wrong with the climbing obesity, child obesity and sky rocketing health care cost and the new bills taking many obesity issues into law.
